Because glass has insulative (heat, sound) that metal does not; as well as hardness metal does not. Per square foot, glass ends up cheaper if you don't actually need the collision properties of metal.An aluminum roof would be fine. I understand Tesla doesn't want to deal with a headliner, so don't add one or just spray it in Plastidip or bedliner and call it a day.
Like the JackCypher pointed out; if you replace the panel you'll need to do something about not cooking/freezing/deafening yourself.
