Gotcha, interestingly, while I was picking my CT up, it was attached to the SC's network and showed that an update was available - clearly deferred updating at the SC and updated immediately after getting to the house.

I had the opposite problem. I did a down payment, then Tesla was slow at getting the financing portion completed and it expired. They never contacted me to get the rest of payment -- I ended up contacting them and asking if they'd like me to actually pay for the truck :)
In you Telsa App, I'd submit a service ticket to get your update pushed to you. Also, what version does your car say its on? Normally, the factory versions are something like 2024.xx.100.xx.
The most current, widely released version, is 2024.33.15 (FSD 12.5.5.2).
