One limitation of the above option compared to yours is no easy way to fit a faucet for the sink etc...

Battery drain would depend on how long you run it for. For reference, I have a 3.6 kW bosch tankless under sink point of use in my backyard BBQ. The one that he was running was probably 3-7 kW range as well. OP looks like he has a 6.5 kW tankless as well...

About 18 months ownership, 10,500 miles. None yet. After seeing the guy who was cut hard by the Rivian door, I try to be extremely careful around the truck especially doors and frunk. Can easily see it happening though.
