You make "eye contact with a rear passenger" sound nefarious. My work truck has camper shell that makes seeing traffic to the rear all but impossible. The only thing I use the rear view mirror for is holding conversations with rear passengers and it comes in handy enough that I'd never remove it.
Your powered coolers may be 120v ready, but they're probably 12V DC powered. You likely have a 120v AC to DC converter. My Igloo is <70 watts. So, if yours are similar you have few options:
