I need some guidance from some veterans. I’ve read that I can tell them that I’ll bring proof of insurance and payment/cashiers check to my pickup (Pleasant Grove) but don’t see a way to tell them that so I can move forward with the process and schedule a delivery. Any guidance?
Also, the last four of my VIN are 8454 in case anybody has seen this baby at the lot.

But you won't be able to schedule delivery until they schedule it for you. Yes, I know stupid, just the way it is.
Get the insurance rider for the Cybertruck from your insurer. Enter it in. Are you putting any money down or paying with third part loan or in full? You can get all of that done beforehand.
Doing that all makes the process easier and faster.
They will not allow you to take the truck until they have proof of insurance.
But the biggest answer is that they will reach out and offer you a pickup date/time. You can probably push that further into the future if needed (by only a few days).
Just chill, you are still in the waiting game, it may take weeks or even a month. Your Cybertruck was still in Austin when you got the VIN.

Just ignore it, i left mine blank until i was at the delivery center, and they checked a box on their endDoes anyone have a number to text Pleasant grove about payment details? The app only allows for a payment to be made, no discussion about paying at pickup.

Also, I’m heading out of the country in two weeks (for a week). I’m assuming that is something that I want to communicate to someone in case delivery times up with my trip. Would that be the service center I need to speak with?
