I'm not going to name names, but if you haven't seen anyone suggest that FSD should adhere rigidly to the speed limits, then you haven't been reading very well.

Basically impossible. Because a Cyber SUV would necessitate extensive testing (including crash testing) and regulatory filing that are publicly visible. They can't "spool up" a new model (start ramping production) without us knowing about it.
You can control the speed yourself as precisely as well as your foot and brain are capable. But that requires steering it yourself.
It's in the name, Full-Self Driving, Supervised. If you don't want it making the driving decisions, then don't use it.
Are you over 60? I think it can be surprising the first couple of times but eventually you will get used to the four categories and be able to push the appropriate one without even thinking about it or having to actually read them. That's likely why they are so big on screen and laid out so simply.

The TPMS display will indicate it's reading a stored temperature. It will say, for example "an hour ago" or "5 minutes ago". If it doesn't indicate it's a stored reading, it's a current reading.

The windshield would take harder hits if the vehicle was moving forward, the tonneau less severe hits. Best thing to do in a severe hail storm (if no cover is available), open the tonneau and come to a stop (it operates fine while driving).
