If you think you'll be changing it often then vinyl should be fine. A good brand of vinyl will last a few years in the sun, and protecting it with a coating will help even more.

If it'll do everything you need it to at a much lower price, then why not. Some of the downsides that you listed can be seen as good things depending on the person/use, so it's all up to you. Definitely drive both or even rent them for a couple days to see what's better.

The delay in the steering was visible in some Cybertruck reviews I've seen in the past where you can see both the steering wheel and the wheels from the outside of the truck, but it's not noticeable when you drive it (unless you try looking for it by swerving back and forth really fast)
