It appears as though there is not a weight sensor in the back, but the AC is triggered on when the seatbelts are fastened. As soon as I attached the car seats using the seatbelts instead of the more sturdy posts, the AC flipped right on.
I figure their car seat and their actual bodies (20+lbs) would be enough to trigger the sensors but perhaps not. I think the constant weight of the car seat makes the sensors think there is “stuff” there instead of human passengers. Need to figure this out.

Ugh, I hate when I answer my own questions. It was the Tesla Caraoke mic that tuned down the speakers. Unplugged it and we're back up and jamming! Thanks everyone!
