I was thinking about your situation and maybe the Hansshow digital mirror (and maybe others) might work for you. This has two cameras, one of which is meant to be front facing and of dubious value. If the wiring is long enough, you could route it to be facing the car seats. The mirror allows for a split screen - showing both cameras views at once. And once the kids are a bit older and front facing you could remove or reposition the camera.
Just a thought from someone who currently has three car seats in the back!
