So when I’m stopped I can hit the camera button on the steering wheel and bring up the camera display. Once I get going, if I’ve forgotten to do that, the camera button only toggles the rear view on and off. Most of my driving I don’t need the navigation screen up. Am I missing a setting in the menus or has anyone else experienced the same issue?

Are you asking if the cameras can stay up while driving? I don't think so.

Same thing happens here. I would assume it is a safety issue to show the other cameras while driving? It does work at low speed and in park. I turn on the front camera when I am pulling into a parking spot to ensure my @$$ isn't sticking out. :)

You can! There’s a dedicated hexa shaped camera button in the Apps.
