Roll out would be more convenient, but most convenient if built-in (could be powered even), except there doesn't look to be room at either front or back of roof panel. And simpler is often better, even if not as convenient. One could have a non-built-in roll out (and another one as a windshield sunshade, given the nearly flat windshield) that attaches along with a hook to hold it closed, with double sided tape. Uncomplicated, removable (if removing the tape doesn't do damage).Exactly, no need to replace the glass, just put an insulated panel inside. Could even be roll out and flexible like the tonneau cover.
I think a fixed panel (with plastic, fiberglass, or some other stiffener layer between outer layers) would be sufficient insulation in itself, except in the most extreme climates (Death Valley in summer, Montana in winter, etc). In that case, a thin layer of closed-cell foam would do the job inexpensively unless one wanted to go psycho and use aerogel.
I left the inserts in place in a T-top Trans Am except for the very rare occasions that I removed the T-tops.
