One thing that bugs me about my FS CT order is the wording with respect to FSD, “Full Self Driving capability.” Technically, don’t all Teslas rolling off the line have the hardware for “FSD capability”? I’d rather it say “Lifetime Full Self Driving.” It’s weird to me the same order form says “Lifetime Premium Connectivity,” not “Lifetime Premium Connectivity Capability.”

They are two different things, one is a monthly data connectivity subscription that Tesla must subcontract to cellular data providers and the other is a software platform that Tesla is still developing to become autonomous. It says "capability" because the software that makes it full self driving is not mature enough to say "Lifetime FSD", obviously for the first part of the Cybertuck's life, it will not have FSD, especially not FSD that is not supervised. It would be false to claim "Lifetime FSD".

IMO, there is zero chance Tesla would ever take away FSD software from Foundation Cybertrucks (or from anyone who had purchased it outright on a different model or trim level).

If there is any weaseling going on here, it's simply that Tesla doesn't want to be responsible for upgrading the hardware forever. Technology marches on. For example, say in 2040 FSD talks to cars around it. Tesla doesn't want to be responsible for upgrading hardware on every aging Tesla that purchased an earlier version of FSD to have bi-directional communication between itself and other road users. But they will still provide the software and map updates that make FSD work on whatever hardware platform you have. And that's the beauty of FSD, it works on it's own, without constant direction from the mothership.

I wonder if it is simply a bit of "legalese" due to the watchful eye of Johnny Law.

That may but it’s a bit of apples and oranges since the possibility of hardware obsolescence is clearly spelled out in the purchase contract.
