That's honestly quite annoying. I very rarely put in a destination on the map and don't want to do that for every trip to the store. But if it keeps trying to make random turns i may just switch back to TACC only. For 99% of my driving I only really want TACC plus lane centering.

Well, that's not what FSD does! You need to tell it where you're going.

Elon and others have said it needs to be good enough to guess where you want to go to... But until then, you're going to have to tell it.

Enter the destination, then start off! You wouldn't have someone drive you somewhere without telling them the destination, would you?

That's a good point; you should leave a relaxed hand on the controls to disengage if it pulls too far, and hover a foot over the brake for if it goes when it shouldn't. Don't hover over the accelerator because you may hit it when you don't mean to; make sure any accelerator overrides are intended and safe - FSD will assume the driver knows better.

The video they published doesn't show how to initiate turn signals or type in destinations.

I find it safer to hover over the accelerator for most scenarios. But I certainly hover over the brake pedal when that seems more prudent (auto park, sheer drop off, etc.)

The number of accidents that were because they didn't stop it or hit the accelerator when they shouldn't have leads me to believe the opposite.

I do understand the comfort factor of pushing it forward when it hesitates, though, but that's not the same as safety. You're safer getting hit from behind than from the front.
