I have noticed this recently and was a tiny bit concerned. I find myself without having my foot on the break, waiting for the green light. I have stepped on the brake a couple of times due to the small "bump-feel," as if an engine gear changed if someone bumped me or if the car was rolling. It happened a few times, so here I am posting to see if this is something "normal?"

I've observed the air-suspension adjusting, and initially I thought I got "honda bumped" or something lol.

Separately I've noticed what you describe, a slight nudge as if a motor disengaged or something. Since there are two motors, maybe it's redistributing between them? ?‍♂

Regardless, I take it as a reminder to step on the brake while waiting at a light. If I leave my foot on the throttle and sneeze, I'm going to obliterate the guy in front of me!

Shouldn't the emergency braking kick in if I sneeze and accelerate?

No, lol...do not try it.
I have the same fear about this when I am home and I will drive through the garage door or drive reverse into the garage door.

Isn't there an emergency braking option somewhere?

That's not how it works. Like with all vehicles, you are able to run into things.

"emergency" like accelerating at the light when there is a car in front of you...I guess not. I want my FSD when it's good and ready.

Emergency, like you are cruising along and someone pops out, brakes will engage...you can still hit the accelerator and hit that person if you wish. AEB is used to mitigate a wreck and potentially avoid it, but you can override it by pushing the go pedal.

Yep, I’ve had this occur many times. At first I thought someone tapped me but it’s nothing to worry about. Tesla said it’s just the air suspension leveling so I don’t really even notice it anymore.
