It was a smart business move to offer one cab and one bed configuration. It's very reminiscent of Ford's early days stating to customers that they can pick any color as long as it's black.
This helps reduce assembly labor costs, minimizes capital costs and positively affects economies of scale. I believe this is why they can scale up to 125,000 units per year rather quickly.
Tesla obviously learned many lessons from the Model 3 "production hell" debacle.
