Parked outside, roughly 30 degrees & for around 12-13 hours. Is this acceptable?

Is there a blue section on the battery meter? If so, the pack did not lose that energy, it's just temporarily unavailable due to being cold.
It only gains about 25% back later in the day when it gets warm out

I agree with the above. But Sentry mode seems to be the real hog, especially if you are getting a lot of them. Here is a fun one to watch when we went to Montreal.

Where is the energy bar now versus the number? My pack is charged to 80%, but 4% is locked up.
Did yours go from (picka starting point) 80% to 74% with 2% blue and 4% grey?

I don’t charge over night but if you do you should slow the charge down so its done right before you leave and battery will be warm

When I have planned departures, I do use scheduled departure and preconditioing to take care of that for me.
Our driving is quite erratic though...

If you can, leave it plugged in until you are ready to leave.

In my case was losing 4 to 6% like you said.
My fix was to make sure you turn OFF "Climate" in summer the Air conditioner was running and now it would be the heat pump if not turned off.

No more loss overnight.
