It's probably just to speed assembly and give a cleaner look.Is it to cut costs? Is there some other issue with the roof appliqués that made Tesla change the default to no flip doors?
You have to remember that Tesla knows a very low percentage of all customers use those forward mounting points and they are always trying to optimize for efficiency. The fact that they reached Cybertruck profitability in the third quarter, a quarter which consisted exclusively of the higher priced FS models, almost certainly means they are not quite profitable now, at least until they further optimize the production line for efficiency.
If Ford or GM could ever be bothered to build a truck this technologically advanced, this capable, this nice, and this durable, I guarantee they would have to sell it for $180K to break even (and then they couldn't sell enough of them to break even). This is why they stick to low cost trucks, that they can sell at a high price (for what you get).
Tesla went all in on the Cybertruck, and are determined to keep it viable, which means keeping it affordable. I'm just glad they delete features almost no one uses instead of saving pennies by slapping cheaper wheels and tires on, cheapening up the bed and cabin materials, deleting the power tonneau, removing rear steer, putting crappy audio systems in, getting rid of the armor glass, etc.
