True. As production volumes increased, Tesla started making the switch to the new model year a month or two before the actual end of the calendar year, which was a smart move for obvious reasons. But the switch is generally not associated with any specific changes, those happen continuously.
Correct, the changes occur constantly on the assembly line. I think Elon had mentioned years back that the managers are required to make efficiency changes every month or so to simplify production and to cut costs wherever possible, hence the missing Tesla trunk badge on my 24 model S hahaha.

I believe that a Cybertruck assembled in November/December would be a 2025. Somebody can correct me if I am wrong.

Rivian was following Tesla on model years but is now taking custom orders for 2025 refreshed R1T and R1S models. Delivery is expected in August/September.

This is correct.

Changes, happen throughout the year and are usually small. Some of the changes actually are regressions like when Tesla removed the passenger lumber from 3/Y or the mobile charging cable or reduce the speaker count, but most are seen as improvements (matrix lights, different roof glass, tilting screen in the MS/X).

These changes almost never come when the "new year" starts shipping in November, they are typically at the end of Q1 or Q2, but sometimes even more random than that, like the increase RAM that allowed steam to be played on the S/X that started shipping Feb 12 a few years ago (my car was made on Feb 11)
My MX was built in Jan 2022 and has 16gb RAM!

Also note that the R will change to an S when the "model year" is 2025.

Tesla typically doesn't tie anything to different model years. The only reason they even have "model years" is because everything in the auto industry is set up for cars to have a model year.
You might wonder why the rest of the auto industry does emphasize model years, and puts a lot of energy into making tweaks (which are often purely cosmetic) on an annual basis.

Remember that there are two ways to buy a car: new and used. Used cars are obviously cheaper, but auto manufacturers make and sell new cars. The manufacturers want customers to perceive a used 2022 vehicle as noticeably outdated, so they will pay more for the latest and greatest 2025 vehicle instead.

Tesla doesn't play this game: if you put a clean 2022 Model Y next to a brand new one, most people probably wouldn't know which is which. Unfortunately, this may be one of the reasons why Tesla's 2024 sales are down, relative to 2023. Lots of used Model 3s and Model Ys are hitting the market now, and they seem exactly like the new ones, only much cheaper. At this point, Tesla's toughest competition may be ... used Teslas.

That's awesome! The more I learn about Tesla's the more I love them.
Stop Fing around and order it! Many people have said they didn’t like the grey in person. Honestly I don’t get the “it’s a truck I don’t want white”. It’s so minimal it’s not a a factor
