I think it’s just a matter of turning the rear wheels in the same direction while moving forward, which is just a function of rear steering without turning.

Sorry, this is not crab walk, this is just how 4 Wheel Steer functions, or malfunctions. This is exactly what happens if we screw up the 4-wheel steer setting in the simulation.

Honest question, what would be a real world use case for this? I understand the idea behind added stability during high speed lane changes but I can't think of one for this.

Yup, been around for 2 decades. In 2003 1/2 ton GMC Sierra/Sierra Denali/Chevrolet Silverado 1500 with 4WS the rear wheel steer was "steer by wire" while the front steering was standard mechanical/hydraulic.

Honest question, what would be a real world use case for this? I understand the idea behind added stability during high speed lane changes but I can't think of one for this.
4 wheel steering on trucks helps with
1. turning into parking slot in parking lots with narrow lanes
2. turning right on intersections with tight corners and narrow lanes
3. towing at high-speed and lane change
4. low speed towing forward and turns
5. low speed towing backing up and turning
6. higher payload & towing GCWR (gross combined weight rating)
7. trailer sway control

The first truck example is GM Quadrasteer. If you ordered the Quadrasteer for 2004 GM Sierra/Chev Silverado the max payload & towing limits were higher than if you did not buy the option. Other options lowered the limits.
Examples:
2004 1/2 ton GMC Sierra/Chevrolet Silverado 1500 and 2500 (non HD)
2004 3/4 ton GMC Yukon XL / Chevrolet Suburban XL

Compared to vehicles without Quadrasteer, vehicles with the feature have a smaller turning radius. This can be very handy for big vehicles such as pickup trucks and SUVs when parking in small spaces. In addition, a smaller turning circle is particularly useful for those who tow boats, fifth wheels, or other large equipment, as it enables easier maneuverability when towing and parking.

The Quadrasteer system adds about 285 pounds of additional weight to the truck but gives back this amount and more in additional towing and hauling capabilities over the C3.
The rear axle’s weight rating increases by 250 pounds to 4,000 pounds and maximum GCWR (gross combined weight rating) climbs from 14,000 to 16,000 pounds.
Towing capacity has increased from 8,700 pounds to 10,000 pounds. The wider rear axle also provides more stability when towing.

Here's what I saw.
Guy walks up to window.
Driver - "dude are my rear wheels turning?"
Continues to turn the steering wheel back and forth.
Guy "Nope".
Continues on to take his port'a'can crap.

I was parallel parking the model Y last night to take the kiddo trick or treating. That space was very tight and it took me a couple extra forward/backward maneuvers. If I had crab walk it would have been a breeze.
